A cake that is light and fluffy, yet able to hold its structure and not crumble to nothing when carved for novelty cakes.

I have tried and tested maaaaany recipes, made tweaks here and there and I think I have finally done it.
I really think I have created the perfect vanilla cake recipe.
And now I am going to share it with you.
You will need:
- 175g butter
- 175g caster sugar
- 1 tsp vanilla extract
- 3 eggs
- 215g self raising flour
- Two lined 7” cake tins
- Vanilla buttercream (see below)
- Raspberry or strawberry jam
Simple Vanilla Buttercream
- 100g butter (room temperature)
- 300g icing sugar
Beat the butter until soft, add the icing sugar slowly. Slowly add the water 1 tablespoon at a time until you have a stiff buttercream. Turn mixer to high to get a smooth, whipped consistency.
